Spaghetti:- - *Take water in a cooking pot add Spaghetti(about one-fourth packet) + salt (half tspn) + few drops of olive oil cover it & put it on high flame. - *Let it boil for about 15-20 minutes (keep checking in every 5 minutes) - *When it is all slimmy and soft,drain the water using colander & leave to dry till your sauce gets ready.
  2. Sauce :- - *Boil the tomatoes - *Once boiled put them to rest to cool - *After cooling peel their skin and put them in a jar of mixie + dried chillies (2-3 if you like spicy else one is fine) + coriander seeds 1tspn and grind them well.
  3. Final preparation:- - *Take a pan put about 2tbspn olive oil & heat - *Add chopped garlic & stir fry them - *Add chilli flakes (1tspn) cook for 30 seconds then add the sauce - *Add black pepper powder (1tspn) + salt (according to taste) + mixed herb or cooking oregano (1tspn) + dried basil (1-2 pinch) and cook it well. - *Once the sauce is cooked you can add jalapenos or anything of your choice like mushrooms,olives, broccoli etc again cook for one minute.
  4. Add Spaghetti stir well & again cook for 2 minutes. - *Now turn off the stove add a little olive oil on top,cover it with a lid and let it sit for 10-15 minutes.
  5. "Serve hot and you can garnish it with cheese of your choice (like I did with dry parmesan cheese) & extra ingredients like jalapenos,olives, mushrooms."
