- Mix the chickpeas and vegetables and pan fry until veggies are slightly wilted. Take off fire. Do the same with the mushroom
- Add the cous cous and mix through vegetable and chickpea mix. Keep the cooker to a minimum
- Add a dash of mixed herbs and toss the ingredients
- Plate up the cous cous, chickpea and veggie mix, mushrooms and have the halloumi as a side dish. Slice up a tomato and add a spoon of greek yoghurt with a dash of chilli powder
- Enjoy!
