- Rinse the Quinoa in mesh. Now add the rinsed quinoa and the water in a saucepan. Bring the mixture to a boil, then decrease the heat to low. Cook till quinoa has absorbed all of the water.Switch off the flame and let the quinoa rest for 5 minutes.
- Chop all the Vegetables- I have used Onion, Bell Peppers, Tomato, Carrot and Cucumber.
- In large pan, add all the chopped Vegetables and chickpeas. Mix well.
- In another bowl, combine olive oil, lemon juice, vinegar, chopped garlic, herbs and salt. Mix well.
- Once the Quinoa is cooled, add it the bowl and then add the dressing. Add salt and pepper and mix well.
- Leave in fridge for 10-15 mins. Serve chilled.
