  1. Take For milk kefir
  2. Get Tb.spoons milk kefir grains (I know! It’s not a printing error)
  3. Get full fat milk
  4. Take For water kefir
  5. Make ready Tb.spoons water kefir grains (less and more doesn’t matter)
  6. Take Tb.spoons sugar
  7. Get litter filtered water

Many people start with this method of making kefir because it's so easy and fun and they want a non-dairy option. Dairy-free versions of kefir can be made with coconut water, coconut milk or other sweet liquids. These will not have the same nutrient profile as dairy-based kefir. When it comes to water kefir vs milk kefir, both can be health-enhancing drinks to consume for most people.

Steps to make Kefir, milk and water:
  1. For milk kefir. In a clean large jar put grains and milk. Cover and leave for 24 hrs. Strain with plastic sieve and transfer to another clean jar. I normally leave a small amount of milk in the milk bottle before fermentation and keep the grains in it after fermentation until I make another batch.
  2. For water kefir. In a clean large jar put sugar and grains. Cover and leave for 48hrs. Strain with plastic sieve and transfer to another clean jar or bottle. If you leave it at room temperature it continues to ferment and it becomes bubbly drink.
  3. Keep the grain in sugar and water mix and keep in the fridge until you need it again. Try using different type of sugar. Also dried fruits can be used. I like the combination of dark sugar and dates.

However, each variety of kefir is made somewhat differently, utilizing unique cultures that provide slightly different end results. If you're someone looking to add kefir into your daily regimen. Water kefir is slightly easier to make and is a great option if you are avoiding dairy. It is made with sugar and water or coconut water or even Juice. Also Water kefir can also contain alcohol especially if juice is used whereas Milk kefir does not make alcohol.
