The ingredients needed to make Potato Salad:
  1. Prepare 3 lb. petite red potatoes
  2. Get 1 red onion, finely chopped
  3. Get 6 celery stalks, chopped
  4. Make ready 1.25 cups mayo
  5. Make ready 2 Tbs. mustard
  6. Take 1 tsp. salt
  7. Get 1/2 tsp. pepper
  8. Take 1/4 tsp. garlic powder
  9. Make ready 2-3 tsp. fresh parsley, chopped (optional)
  10. Get 8 hard-boiled eggs, chopped
Instructions to make Potato Salad:
  1. In a medium stockpot, cover potatoes with water. Bring to a boil. Once boiling turn down the heat to medium-high and cook for 30 minutes. Must my fork tender. If not sure cook for 5 minutes. Drain water and set potatoes aside to cool. (Cool for 45 minutes)
  2. While potatoes are cooking, in a sauce pan cook eggs. Cover eggs with water. Bring to boil and cook for 12 minutes. Drain water and then put eggs under cool water until they are cool enough to peel.
  3. While eggs and potatoes are cooking chop onion, celery, and parsley. Add into a large mixing bowl wit mayo, mustard, salt, pepper and garlic powder. Chop eggs and potatoes once cool and mix into the salad.
