Instructions to make Spaghetti carbonara caprese:
  1. Bring a pot of salted water to a boil. Cook pasta according to package directions.
  2. I always blanch my broccoli in the pasta water in the last few minutes of cooking. Reserve a cup of pasta water. Set aside.
  3. Heat large sauté or frying pan to medium/medium high. Splash with olive oil if desired. Cook bacon to your preference. Drain the grease if desired (I don't).
  4. Beat eggs with parmesan cheese in separate dish. Add salt and pepper if desired.
  5. Add tomatoes to bacon and let cook for a few minutes in bacon grease. Add garlic. Remove from heat when garlic becomes fragrant (approximately 1 minute).
  6. Add pasta, broccoli, and egg mixture to sauté pan and stir quickly to distribute and cook the eggs without scrambling them.
  7. If pasta seems too dry, add reserved pasta water slowly until desired consistency is reached.
  8. Add mozzarella and basil and toss to combine.
  9. Garnish with parsley and more parmesan if you choose.
