Instructions to make Spaghetti carbonara caprese:
- Bring a pot of salted water to a boil. Cook pasta according to package directions.
- I always blanch my broccoli in the pasta water in the last few minutes of cooking. Reserve a cup of pasta water. Set aside.
- Heat large sauté or frying pan to medium/medium high. Splash with olive oil if desired. Cook bacon to your preference. Drain the grease if desired (I don't).
- Beat eggs with parmesan cheese in separate dish. Add salt and pepper if desired.
- Add tomatoes to bacon and let cook for a few minutes in bacon grease. Add garlic. Remove from heat when garlic becomes fragrant (approximately 1 minute).
- Add pasta, broccoli, and egg mixture to sauté pan and stir quickly to distribute and cook the eggs without scrambling them.
- If pasta seems too dry, add reserved pasta water slowly until desired consistency is reached.
- Add mozzarella and basil and toss to combine.
- Garnish with parsley and more parmesan if you choose.
